Apple Pie Crumble Bars

ingredients

Filling: 

  • 6 cups apples (peeled, chopped)

  • 3 tbsp coconut sugar

  • 1 tsp ground cinnamon

  • 1/4 tsp sea salt

  • 3 tbsp lemon juice

  • 1 tbsp melted coconut oil 

Crust: 

  • 1 cup raw almonds

  • 1 cup Strp’d Tigernut Flakes

  • 2 tbsp coconut sugar

  • 1/4 tsp sea salt

  • 5–6 tbsp melted coconut oil

Crumble:

  • 3 tbsp coconut sugar

  • 3 tbsp Strp’d Tigernut Flour

  • 1/4 cup Strp’d Tigernut Flakes

  • 1 1/2 tbsp coconut oil

instructions

  1. Preheat oven to 176°C and line an 8×8-inch pan with parchment paper.

  2. Toss apples with coconut sugar, cinnamon, sea salt, lemon juice, and coconut oil. Bake covered for 18 minutes, then uncovered for 5 minutes.

  3. Blend flakes, almonds, salt, and sugar into a fine meal. Mix in coconut oil until crumbly. Press into the pan, bake for 20 minutes until golden, and set aside.

  4. Mix sugar, flour, oats, and coconut oil into a crumble. Spread baked apples over the crust, top with crumble, and bake for 20 minutes until golden.
