Gingerbread Cookies
ingredients
1/2 cup butter, softened
1/2 cup cane sugar (+ extra for rolling)
1 egg
4 tbsp molasses
3/4 tsp baking powder
1 tsp cinnamon (+ extra for rolling)
3/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp sea salt
1+2/3 cups Strp’d Tigernut Flour
2/3 cup almond flour
1/3 cup cornstarch
instructions
Preheat oven to 190°C and line baking trays.
Mix sugar and cinnamon for rolling; set aside.
Cream butter and sugar; mix in egg, molasses, baking powder, and spices.
Add flours and cornstarch to form thick dough; chill for 30 minutes.
Roll into balls, coat in cinnamon sugar, flatten, and bake for 10–11 minutes.
Cool before serving.
Optional: Drizzle with glaze made of powdered sugar and plant milk.
