Gingerbread Cookies

ingredients

  • 1/2 cup butter, softened

  • 1/2 cup cane sugar (+ extra for rolling)

  • 1 egg

  • 4 tbsp molasses

  • 3/4 tsp baking powder

  • 1 tsp cinnamon (+ extra for rolling)

  • 3/4 tsp ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp sea salt

  • 1+2/3 cups Strp’d Tigernut Flour

  • 2/3 cup almond flour

  • 1/3 cup cornstarch

instructions

  1. Preheat oven to 190°C and line baking trays.

  2. Mix sugar and cinnamon for rolling; set aside.

  3. Cream butter and sugar; mix in egg, molasses, baking powder, and spices.

  4. Add flours and cornstarch to form thick dough; chill for 30 minutes.

  5. Roll into balls, coat in cinnamon sugar, flatten, and bake for 10–11 minutes.

  6. Cool before serving.

Optional: Drizzle with glaze made of powdered sugar and plant milk.
