Tigernut Flakes Salad Topper

ingredients

  • ½ cup grated parmesan cheese

  • 3 large cloves garlic, thinly sliced evenly

  • ¼ cup sesame seeds

  • Zest of 1 lemon

  • Salt & black pepper, to taste

  • ¼ cup neutral frying oil

  • 1.5 cups Strp’d Tigernut Flakes

  • 1 tbsp fresh parsley, finely chopped

  • ¼ tsp smoked paprika

  • 1 baby gem lettuce

instructions

  1. Preheat oven to 200°C. Line a baking sheet with parchment. Spread grated parmesan into a 5x6-inch rectangle and bake for 3–4 minutes until golden. Let cool.

  2. Heat a small pan over medium-low. Add oil and sliced garlic, cooking until golden. Remove browned pieces onto a paper towel.

  3. In the same pan, toast tigernut flakes and sesame seeds in the garlic oil over medium heat, stirring until crispy.

  4. Transfer to a bowl. Crush the fried garlic and parmesan crisp, then mix with the toasted flakes, sesame, parsley, lemon zest, paprika, salt, and pepper.

  5. Toss baby gem leaves with the salad topper.
