Tigernut Flakes Salad Topper
ingredients
½ cup grated parmesan cheese
3 large cloves garlic, thinly sliced evenly
¼ cup sesame seeds
Zest of 1 lemon
Salt & black pepper, to taste
¼ cup neutral frying oil
1.5 cups Strp’d Tigernut Flakes
1 tbsp fresh parsley, finely chopped
¼ tsp smoked paprika
1 baby gem lettuce
instructions
Preheat oven to 200°C. Line a baking sheet with parchment. Spread grated parmesan into a 5x6-inch rectangle and bake for 3–4 minutes until golden. Let cool.
Heat a small pan over medium-low. Add oil and sliced garlic, cooking until golden. Remove browned pieces onto a paper towel.
In the same pan, toast tigernut flakes and sesame seeds in the garlic oil over medium heat, stirring until crispy.
Transfer to a bowl. Crush the fried garlic and parmesan crisp, then mix with the toasted flakes, sesame, parsley, lemon zest, paprika, salt, and pepper.
Toss baby gem leaves with the salad topper.
