Vegan Tigernut Mince Pie Recipe

Vegan Tigernut Mince Pies
Ingredients
For the dough
- 100g tigernut flour 
- 100g oat flour 
- 6-7 tablespoons melted coconut oil 
- 2 tablespoons maple syrup (optional) 
- 1/4 teaspoons sea salt 
For the filling:
- 75g mixed fruit, seeds and nuts (optional 
- 1 tablespoon coconut oil 
- 1 tablespoon water 
- 1 teaspoon cinnamon 
- 1/2 teaspoon nutmeg 
- juice of 1/2 an orange & zest 
Instructions
- Combine all the dough ingredients and mix to create a dough. Add more coconut oil if you need it. If you opt for no maple syrup you will need more coconut oil so that it all comes together. 
- Press the dough into lined a lined cupcake tray. Make sure to get high on the sides so you have little cases for your filling. 
- Pre-heat the oven to 180°c 
- Combine the filling ingredients in a saucepan and heat on a low heat for 10 minutes 
- Fill the mince pie cases and place in oven for 15 minutes until the edges are golden brown 
- Let them cool and then sprinkle with desiccated coconut (optional)
