Tigernut Protein Energy Balls
Ingredients
- 1/2 cup strp’d tigernut flour 
- 1/4 cup coconut oil 
- 3 pitted medjool dates 
- 2-3 tablespoons raw cacao powder 
- 1 tablespoon collagen or hemp protein powder 
- A splash of water or plant-based milk of choice 
Instructions
- Place all ingredients into a blender/food processor and blitz until you get a thick mixture 
- Spoon the mixture into a bowl and roll into small balls 
- Roll the balls in a light dusting of cacao powder if you want an even more intense chocolate flavour 
- Line a baking tray or dish with parchment paper and place balls on to it 
- Chill in freezer to set for approx 15 minutes
