Vegan Apple Cinnamon Christmas Cake Recipe

Vegan Apple Christmas Cake
Ingredients
312g Tigernut flour
1 and 1/2 teaspoons baking soda
1/2 teaspoon sea salt
1 and 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cardamom
250g brown sugar
1 tablespoon fresh lemon juice
240ml non-dairy milk of choice
80ml extra virgin olive oil
1 teaspoon vanilla extract
1 tablespoon apple cider vinegar
2 tablespoons apple sauce
2 apples, peeled and chopped into cubes
Instructions
Preheat oven to 180ºC and grease a Bundt tin
Add the lemon juice to the non-dairy milk and leave aside for 5 minutes to create a vegan ‘buttermilk’
Combine all dry ingredients through a sieve (tigernut flour, baking soda, sea salt, spices, sugar)
In a separate bowl, whisk the buttermilk, oil, vanilla, apple cider vinegar and applesauce.
Create a well in the dry ingredients, add the wet ingredients and mix well.
Add the chopped apples
Bake for 45-55 minutes in the oven until a toothpick comes out clean
