Tigernut Flour Vegan Cinnamon Rolls

ingredients

Rolls:

  • 3/4 cup Strp'd Tigernut Flour

  • 1/3 cup coconut oil

  • 1/4 cup coconut sugar

  • 1/2 cup almond milk

  • 1 tsp xanthan gum

  • 1-1/2 cups blanched almond flour

  • 1/2 tsp baking soda

  • 1/3 tsp salt

  • 1 tbs cold water

Filling:

  • 3 tbsp coconut oil

  • 1/3 cup coconut sugar

  • 1 tbsp cinnamon

Icing:

  • 3/4 cup blanched almond flour

  • 1/4 cup coconut oil

  • 1/4 cup coconut sugar

Rolls:

  1. Preheat oven to 180°C and grease an 8"x 8" glass baking dish.

  2. In a food processor, combine tigernut flour, coconut oil, and coconut sugar; process until buttery.

  3. Transfer to a mixing bowl.

  4. Add almond milk and xanthan gum and mix well.

  5. Add almond flour, baking soda, and salt; mix until dough comes together.

  6. Roll or pat out on an almond-floured counter to an 8"x 12" rectangle.

Filling and Assembly:

  1. In a small bowl, cream together the coconut oil and coconut sugar.

  2. Mix in cinnamon.

  3. Spread evenly over dough rectangle.

  4. Roll dough up lengthwise.

  5. Cut into 10 sections.

  6. Transfer to prepared baking dish.

  7. Bake for 35 minutes.

  8. Cool completely.

Icing:

  1. In a food processor, combine all icing ingredients.

  2. Drizzle rolls with icing right before serving.
