Vegan, Gluten Free Pecan Pie Recipe

Vegan, Gluten Free Pecan Pie
Ingredients
- 1 and 1/2 cups strp’d tigernut flour 
- 1/2 cup coconut flour 
- 6 tablespoons coconut oil 
- 1 teaspoon vanilla 
- 400ml coconut milk 
- 6 tablespoons maple syrup 
- 100g chopped pecans 
Instructions
- Combine the coconut milk and maple syrup in a pan and bring to boil for a minute then reduce to a low heat and let it simmer for 20 minutes 
- After 20 minutes add the chopped pecans 
- Bake in oven for 15 minutes at 175°C 
- Mix tigernut flour, coconut flour, coconut oil and vanilla until no clumps remain. 
- For the base: layer a round baking tin with baking paper and press the above mix down into the tin. The mix will be a bit crumbly. Bake for 15 minutes at 175°C. 
- Pour the coconut milk, pecan mix on top of the base and let it cool (or refrigerate)
