Chickpea-free Beetroot Hummus
Ingredients
- 1 cup tigernut flour 
- 1/4 cup lemon juice 
- 1/4 cup tahini 
- 1/2 cup yoghurt 
- 3-4 small garlic cloves, minced 
- 2 tablespoons extra-virgin olive oil 
- 1 roasted beetroot 
- salt to taste 
- 2 tablespoons water (if needed) 
Instructions
- Blend all ingredients together until smooth and creamy! 
- Top with drizzled olive oil, sumac and zataar!
